Description
Nose: Beautiful lift, lemon verbena, pink musk and nuance of pink grapefruit. Complex nose underscored by a base note of nuttiness.
Palate: The palate is textural, elegant and immensely approachable. A full bodied sparkling exhibiting sweet fruit on the front palate, think pink lady juiciness, green strawberries, pink grapefruit pith all delicately balanced with the fine and elegant mousse leading to a long, chalky acidity which finishes long, complex and fresh.
Vineyard: Grown on high slopes of Ferguson Valley on eastern facing slopes to retain the natural acidity and delicacy of the Chardonnay grape.
Winery: 100% Chardonnay. The fruit was picked in the cool of the night to retain freshness and delicacy. Processed immediately only the the most delicate juice was captured for this wine. Primary ferment occurred in used French oak Barriques. Then left on lees to encourage texture and complexity. Blended, before secondary ferment encouraged and bottled.
