The wine is fermented exclusively in stainless steel tanks so as to retain the fruit intensity and vibrancy that Sauvignon Blanc has to offer. As a stand alone varietal wine , we aim for the riper, tropical spectrum of fruit flavours rather than the herbaceous, ‘green bean’ characters.
Aromatically, the wine displays the pungent varietal characters of passionfruit and gooseberry, whilst the palate is soft and offers a generous mouthful of Sauvignon flavours. The wine is at its optimum drinking over the next twelve months, after which the flavours will move into the honey, toasty spectrum and a broader mouthfeel.
Suggested food pairings include seafood of any description and mildly spiced cuisine.
