Late Harvest Semillon 2008

This wine is made from a selected parcel of Semillon vines in our vineyard which consistently produces grapes high in sugar and of concentrated flavour. After reaching optimum maturity the grapes were harvested, chilled and then crushed before a long cool fermentation to retain the rich flavours.
It was then stabilised before the end of fermentation when the sugar/acid balance was deemed appropriate for the style, clarified and then bottled in May of 2008. As with previous releases, this wine sees no oak maturation as its charm is the vibrant fruit which would only be hidden by oak. As the name suggests, there is some residual sugar in this wine, but there is fresh acid to counter this, and the finish is ‘crisp’ rather than cloying.
With appropriate cellaring, this wine will develop toasty, honeyed characters and a softer, rounded mouthfeel, though we encourage consumption before year three.. Well chilled, it’s a treat on its own, though it can be enjoyed with Asian cuisine (especially curries), summer fruits and blue cheese.
