Late Harvest 2011

This wine is made from a selected parcel of Semillon and Sauvignon Blanc vines in our vineyard which consistently produces grapes high in sugar and of concentrated flavour. After reaching optimum maturity the grapes were harvested, chilled and then crushed before a long cool fermentation to retain the rich flavours.
It was then stabilised before the end of fermentation when the sugar/acid balance was deemed appropriate for the style, clarified and then bottled in June of 2011. As with previous releases, this wine sees no oak maturation as its charm is its vibrant fruit . There is some residual sugar in this wine, but this is countered with fresh acid, and the finish is ‘crisp’ rather than cloying.
With appropriate cellaring, this wine will develop toasty, honeyed characters and a softer, rounded mouthfeel, though we encourage consumption before year three. Well chilled, it’s a treat on its own, though it can be enjoyed with Asian cuisine (especially curries), summer fruits and blue cheese.
